Foxtail Upma Thinai Upma
Ingredients
1 cup Thinai semiya (Foxtail Millet)
1 Onion
2 Green chilli
½ cup Carrot, beans, peas
1 teaspoon Ginger finely chopped
Salt
To temper
2 teaspoon Oil
½ teaspoon Mustard
2 teaspoon Urad dal
2 teaspoon Chana dal
1 sprig Curry leaves
Prep:
Soak: Briefly immerse the Thinai Semiya in water for 3 minutes (check package instructions for specific times). Drain completely using a metal strainer. Don't over-soak, or it'll get mushy!
Steam: Cook the drained Semiya in an idli pot for 5 minutes. Once done, flip it onto a plate and fluff it up, then keep it covered.
Cook & Mix:
Heat: Heat oil in a pan and add the tempering ingredients. Fry until fragrant.
Sauté: Add ginger, onion, and green chilli. Cook until translucent.
Veggies (Optional): Add chopped vegetables and a pinch of salt. Cover and cook on low heat for 2-3 minutes until the veggies are tender.
Season & Finish: Add more salt (to taste) and the cooked Semiya. Mix well for a minute. You can even add a drizzle of coconut oil for extra flavor (optional).
Tips:
Don't over-soak or overcook the Semiya. Follow the instructions carefully for perfect texture.
Feel free to skip the veggies for a simpler version, but adding them boosts the health factor!
If adding salt after veggies, stir quickly before adding the Semiya for easier mixing.
